With summer now upon us, what better way to hydrate than with coconut water…
Not only does it taste great, but it is a great hydrator from the sun, quenches thirst from alcohol and is full of electrolytes!

Although I have not eaten meat for over 20 years, I have eaten fish, eggs and butter on and off. However, with my recent trips to India, where I find it so easy to be vegan; as well as working on 2 yoga retreats for a total of 6 weeks with vegan food, I really wanted to try to keep it up. Not only is the food amazing but obviously there are the ethical reasons behind it as well as the nutritional ones:

u fancy a healthy breakfast but struggle to give up eggs1 for their protein, and don’t fancy breakfast cereals; then try garlic mushrooms, salad, tomatoes and avocado.

This lentil stew has become one of my staples as so nice when sick of cold food to have some nice warming vegetable protein!
Unfortunately the lentils were out of a glass bottle as I had no time to soak the lentils on the road and didn’t want to buy a whole bag of dried ones when travelling around heavy enough already!
However, with tomatoes, carrots, one leek and my garlic, onion, herbs, spices and sea salt, it was actually really nice! And really quick to make too!
Luckily I had a bit of broccoli and leek left in the fridge and found a sachet of miso soup which I brought with me just in case!
Plus the content s of my food bag: garlic, onion, salt, turmeric and paprika, it was actually really tasty!
It is also very warming so lovely to have after not having a kitchen for a while and eating lots of cold food. It is also a great form of protein enabling me to keep up the veganism 1 for a while longer. Continue reading
So these are the times where I struggle to be vegan1:
So a quick trip to the supermarket nearby and I snuck in a carton of gazpacho, a tomato, a tortilla and some olives!
Any other ideas obviously would be gratefully received! 🙂
It was actually eaten in their containers but I was lucky enough to have even plates and cups to eat the leftovers with (hence the photo!) ;).

It’s not always easy finding cutlery on the go, so I often carry around my baby fork and come across knives when I can…
So, I have learnt to open an avocado with a fork, stab it all the way around and then twist the top half! And then at least you have the fork to scoop the avocado out with, a lot easier than with a knife.
Then buy some rice cakes and gazpacho and there you have your meal! Continue reading
So I have been travelling around Europe for the most part of the last 6 months and as a nutritionist, it has often been difficult to stay healthy.
For one, I often don’t even have a kitchen, so resort to things I can buy ready to eat. When I do have a kitchen, it often consists of one hot plate and a microwave! And sometimes it has just been a matter of finding something to eat whilst on the road. Continue reading
